We raise Ibericos and Iron age hogs, however we only use Iberico legs to make the jerky. The pork slices are marinated for 90 hours and then slowly roasted for 24 hours until they're perfect jerky! As far as we know nobody in the USA makes Iberico jerky and possibly the world!
